In the lead up to London Cocktail Week we’ve partnered with Nick Weston, one of the stars of our Wild A State of Mind film series to create an innovative five-course menu served at Carousel, from 1st-5th October 2019.
The evenings will include a five-course culinary tour of wild and seasonal UK produce created by Nick Weston of Hunter Gather Cook, along with perfectly paired foraged Botanist cocktails crafted by Abigail Clephane, The Botanist Gin’s UK brand ambassador.
Locally sourced ingredients always taste better, reconnecting us to a traditional way of life that is currently at risk of being lost – and Nick Weston’s Hunter Gather Cook at the forefront of this foraging movement. Nick left London after three years working as a freelance chef to build a treehouse in the quiet Sussex woods, living there off-the-grid to gain a better understanding of how to use the wild ingredients he acquired through fishing, hunting and foraging, and how to cook these over live fire.
Nick will be working alongside the Carousel team, at their award-winning Marylebone restaurant and creative hub. The menu will reflect a celebration of game, featuring the best in wild and foraged food that the UK has to offer, including Douglas fir cold smoked fallow deer, grilled wood pigeon breast, and blow-torched pheasant, and perfectly paired cocktails including the long and fizzy Fig Leaf, a peachy and tannic Nettle Gimlet and an earthy Truffle Martini.
