Citrus and Seaweed cordial

Use this Citrus and Seaweed cordial in sparkling water or sparkling wine, drizzled over desserts, or pair it perfectly with a Botanist Gin and Tonic for the ultimate mermaid cocktail.- Zest and juice of 2 limes
- 2 fronds of Kelp seaweed
- 1/2 cup of Nori seaweed
- 2 cups of sugar
- 1 stick of vanilla
- 4 ½ cups of water
- ½ tsp citric acid
- Place all ingredients in a pot and simmer for 15 minutes, stirring until the sugar has dissolved.
- Remove seaweed.
- Bring to the boil and then simmer for another 20 minutes until the syrup thickens and reduces slightly.
- Line a sieve or colander with a muslin cloth and strain the cordial into sterilised bottles.
- Use straight away. Otherwise, it will last up to 6 weeks if stored in the fridge.
