In this Nutty Fig Martini the herbaceous, green vanilla, fig-leaf flavour, combined with the nuttiness of an Amontillado Sherry provides an enticing whistle whetter – especially alongside a warm, salty cheesy appetiser.

The pickled walnut garnish nods to the classic ‘Gibson’ martini.

This Nutty Fig Martini is paired with the starter in our Hogmanay menu.  There are few better pairings than fig, walnut and sherry!

  • 60ml (2oz) The Botanist Gin
  • 20ml (3/4oz) Fig Leaf Honey Water
  • 20ml (3/4oz) Amontillado Sherry
Instructions for making the Nutty Fig Martini cocktail:
  1. Combine all ingredients in a mixing glass
  2. Fill the mixing glass with ice and stir until chilled
  3. Strain into a chilled martini glass of your choice
  4. Garnish with a slice of pickled walnut

For Fig Leaf Honey Water or a store cupboard substitute:

If you don’t have any local fig trees you can pick from, look online for dried leaves. (Or you can substitute with a similar quantity mixture of fig liqueur-like Briotett, honey water and a dash of sherry vinegar).

Instructions for the Fig Leaf Honey Water:


• 250ml Water
• 250ml Apple Cider Vinegar
• 250ml Raw Honey
• 4 Fig Leaves


  1. Combine all ingredients in a saucepan and bring to a simmer
  2. Remove from heat at the point of simmer and allow to infuse for 4 hours
  3. Strain into a bottle and keep refrigerated for 4-6 weeks
