This easy pomegranate and thyme martini cocktail recipe balances the tartness of winter fruit with the aromatic earthiness of thyme.

  • 50ml (1½ oz) pomegranate infused The Botanist Gin
  • 10ml (½ oz) Bianco vermouth
  • Sprig of fresh Thyme
Instructions for making the Pomegranate & Thyme Martini cocktail:
  1. Muddle a teaspoon of pomegranate seeds into The Botanist and leave to infuse for 2 hours before straining. A dash of pomegranate juice will also do the job.
  2. Add the infused-gin and vermouth to a mixing glass with ice and stir until chilled.
  3. Strain into a chilled coupe.
  4. Garnish with a sprig of fresh thyme.
