Byron’s Bramble Botany

By Kate

“A crimson cloud it spreads and glows”

Boil brambles until juicy and strain off the juice. Wash the outside of your glass with a weak sea-salt solution. Freeze. Into the salty glass pour some of the bramble liquid and swill around to coat the inside leaving a small puddle in the base of the glass. Freeze again.

Over ice shake

  • 2 parts Botanist gin
  • 1 part bramble liquid
  • 1 hazelnut liqueur
  • Strain into the iced glass and top with tonic. Dry. Autumny.

Brambles, they’re everywhere this month.
