Diviners Honey Sage Tonic

Sage has many varieties, one called Diviners sage. A ‘Diviner’ was a fortune-teller – the word stemming from the French word ‘deviner’, meaning ‘to guess’. This cocktail uses pineapple sage (a variety of sage) from my own garden, steeped into honey from my neighbours bees, and heated with some broiling water, then cooled and strained to produce the simple syrup.

  • 3/4oz of Porters Tonic
  • some sparkling water
