This deliciously spicy cocktail is a native Australian twist on a classic Red Snapper, using The Botanist Islay Dry Gin. Featuring an array of native Australian spices, and fruits the drink is inspired around The Australian Bush Tomato, which comes from a family of native flowering plants, known as Nightshade.

Native Australian Thyme is ground and muddled in order to bring out the wonderful natural oils. The thyme is then left to sit in The Botanist Islay Dry Gin for a day in order to infuse the gin with its wonderful flavour and colour. Pepperberry is also ground and turned into a syrup using boiling water and caster sugar. A basic recipe for the syrup:

  • 100ml Boiling Water
  • 100mg Caster Sugar
  • 20mg Ground Pepperberry

Native to Australia, Finger Limes provide both a citrus and bitter element to the drink, similar to that of Lemon, and grapefruit. The finger limes are cut open in order to extract the juice. All these native ingredients are fused together with the following specifications:

  • 50ml The Botanist Islay Dry Gin infused with Native Australian Thyme
  • 15ml Ground Pepperberry Syrup
  • 2 Bar spoons of Native Australian Finger Limes
  • 40ml Tomato Juice


Ground Pepperyberry is used to rim the glass providing a wonderful spicy kick on sipping. Skewered Australian Bush Tomato is used to complete the drink.

Native Thyme, Pepperberry, and Finger limes are all able to be sourced from around NSW and QLD.
