By Hiroyasu Kayama

Ingredients:
  • 30ml The Botanist
  • 60ml Japanese botanical soda
  • Japanese mandarin (Yamato-Tachibana), spicebush, Japanese cinnamon leaves, temple juniper berries, Japanese
  • peppermint, worm wood, camomile, maple sap.
  • 5ml Fresh lime juice
  • 5ml Honey

Method:

Create Japanese botanical soda by placing Japanese mandarin, spicebush, Japanese cinnamon leaves, temple juniper berries, Japanese peppermint, chamomile, and painted maple sap into a plastic bottle carbonator. Pump in carbonation to create soda. Pour The Botanist into a bowl, add worm wood, and stir (this adds an essence of bitterness to The Botanist). Place ingredients, lime, and honey into a shaker. Shake and pour into glass. Pour on Japanese botanical soda to the drink, into the glass. Decorate with Japanese mandarin, spicebush, Japanese cinnamon leaves, temple juniper berries, Japanese peppermint, and camomile. Place a lid to circulate the scent within the glass.
