Secret of Islay

In Switzerland, finding foraged products is easy. There there are the new textures and new ways of using ingredients at the distillery. I’ve been to Ireland before, but there is something different about Islay. Is it the flowers, the sea combination? Intense flavours, astonishing landscape?

  • 25ml Dandelion Honey
  • 35ml tansy & apple vinegar
  • 1 raw egg white
  • 3 stones
  • 40ml Botanist gin

Garnish: barbary flowers caramelised, with vinegar. I have stones in this drink, in homage to the landscape. They always add a lot, think of the mystery of stonehenge…
