  • 60ml Botanist Islay Gin
  • 30ml Lemon Juice
  • 20ml Elderflower syrup (house made)
  • 2.5ml Rose Water
  • 10x Tasmanian Pepper berries (Tasmannia lanceolata)
  • 1x Egg white


In a Boston glass add fresh pepper berries and lightly muddle to release juices and then add all other Ingredients. Dry shake first then shake with ice till chilled. Double into Coupe glass strain using hawthorn strainer and fine strainer. Garnish Elderflower Flowers.

Elderflower locally found in Hobart, in suburbs, forests and in my back yard. Tasmanian pepper berries (Tasmannia lanceolata) foraged by a friend in Stanley far North of Tasmania.
