
The Coille

- 6x Frozen Brambles
- 15ml Syrup of chamomile, angelica root, rosehip
- 30ml Sorrel water
- 60ml Botanist gin
Method:
Mash together. Ice and shake. Double strain. Bash Douglas Fir around the rim. Garnish with jelly ear mushroom.
Foraging notes
Coille, meaning a small wood or copse in Gaelic. Camomile and angelica bringing out aspects of the gin, with the freshness of sorrel, and poignancy of autumnal flavours from the turning season.
