The Scottish Lilly

The drink encompasses elements of the Australian bush with the harshness of the Scottish seasons. slightly sweet, salty, earthy and downright tasty.

  • 45ml Botanist Gin
  • 15ml Lilly Pilly Gin
  • 1 Finger lime squished out
  • 15ml simple sugar syrup
  • 30ml steeped lemon juice


This was done by leaving bottle brush, lemongrass, lemon myrtle and lemon thyme in the juice for a day. Hard shake and double strain into a crystal goblet. Garnish a bouquet of native flowers.

I have used ingredients foraged from central Queensland, including lilly pillys and Finger limes from Mt Tamborine. Also i have foraged ingredients from my local suburb in the city of Sydney. these include bottle brush and lemon myrtle found on the street and also lemongrass from my backyard.
