11th Hour Reviver

We've called this the 11th hour reviver because it was created for the Botanist Gin tours, which are at 11 am, and we came up with it at the last minute! If you have a cold, I can vouch for it being marvellous reviving, like a chilled honey and lemon, but the 'reviver' moniker actually comes from its similarity to the recipe for a corpse reviver, a cocktail which has a long and illustrious history. 

25ml gin

25ml vermouth

25ml lemon juice

25ml sugar syrup

4 sprigs of lemon balm

Bash up the lemon balm for 60 seconds with the other ingredients in a mixing jug, then stir down with lots of ice. Double strain into a chilled martini glass and garnish with rosemary.

Rosemary works well as a garnish in gin drinks, including gin and tonic, as it contains the flavour compound pinene, as juniper does.
