Foraging used to be all we knew; we were self-reliant, adaptive creatures in a dynamic natural world. Those instincts have gone to sleep in bland days of convenience and blasé consumption.
Welcome to an invigorated spirit of enquiry, a sharpening of the eyes, where any general environment can become personal if we engage with it. Any landscape can become a foodscape.
Our explorations of flavour on the wild Scottish island of Islay led to us to create The Botanist. Along the way we’ve found friends across the globe – like-minded souls who share the same curiosity and passion for flavour. The guiding principle is that there is always more we can learn.
“The only real voyage of discovery consists not in seeking new landscapes but in having new eyes.” PROUST
