Creamy and viscuous

Nose

This rich copper spirit opens with notes of fresh, ripe fruits, candied orange and light juniper. Clean, crisp apple and watermelon and tropical fruits of mango, peach and dried banana mingle with sweet, sugared almonds and lightly toasted oak.

Taste

The mouthfeel is creamy and viscous. Sweet, fresh fruit blends with vanilla ice cream with toasted oak. The length and complexity on the palate is a testament to the time in oak and the careful selection of casks to complement the complex botanicals and the wonderful balance they possess.

The depth of the oak and the gentle earthy spices warm the palate while allowing the floral and herbal notes of The Botanist to remain at the heart of the profile.

Finish

On the finish, the tropical fruit notes linger. Oaky vanilla fades and grilled pineapple and mango puree last on the palate with subtle hints of crushed coriander, candied orange, fragrant juniper and sweet cassia.

What does ‘cask aged’ mean?

This refers to the fact that this gin has spent some time maturing in oak casks. In the case of our Cask Aged gin, it spends at least three years maturing in casks before it is bottled.

What type of casks do you use to mature The Botanist Cask Aged Gin?

As with Cask Rested, it is up to Adam to decide which casks are the best to use for Cask Aged. A selection are used, which includes Bourbon, Amarone, Sauternes, Pauillac, Rum and St. Emilion casks.

What is the difference between Rested and Aged?

One of the main differences is that Rested is matured for a minimum of six months in oak casks, whereas Aged is matured for a minimum of three years, so the time spent in cask is significantly longer for Aged.

A different selection of casks are also used for each expression, contributing to their unique and distinct flavour profiles.
