Islay Cask Rested Gin Amaro

INGREDIENTS

  • 50ml The Botanist Islay Cask Rested Gin
  • 25ml Amaro
  • Orange peel and a maraschino cherry

METHOD

  1. Add the gin and amaro to a mixing glass filled 2/3 up with ice
  2. Stir well until chilled and slightly diluted
  3. Strain over a large ice cube into a rocks glass
  4. Garnish with a maraschino cherry and a twist of orange

INGREDIENTS

  • 1.5 oz The Botanist Islay Cask Rested Gin
  • 1 oz grapefruit juice
  • 0.5 oz lime juice
  • 0.5 oz honey
  • grapefruit soda
  • sea salt & a grapefruit wedge

METHOD

  1. Rim half the glass with the sea salt
  2. Add all ingredients except the soda to a highball glass and stir
  3. Fill with ice and top with the grapefruit soda
  4. Garnish with the grapefruit wedge

What does ‘cask rested’ mean?

This is a term we have coined which simply means that the spirit is placed into oak casks for a short period of time - in this case, for a minimum of six months - to allow it to infuse with the colour, tannins and flavour notes of the wood.

What type of casks do you use for The Botanist Cask Rested Gin?

Our Head Distiller, Adam, chose a selection of casks for this release. The Botanist Gin was placed into a mix of Sauternes, Pomerol, St. Emilion, Rivesaltes, Charentes, Virgin Oak, recharred barrels and a few more in order to craft the unique flavour profile. There are approximately 16 different cask types used.

What is the difference between Rested and Aged?

One of the main differences is that Rested is matured for a minimum of six months in oak casks, whereas Aged is matured for a minimum of three years, so the time spent in cask is significantly longer for Aged.

A different selection of casks are also used for each expression, contributing to their unique and distinct flavour profiles.

What is the best way to enjoy Rested?

We recommend you try Rested neat to fully appreciate its complexity and depth of flavour. You can also try it in an Amaro which is created simply by mixing Rested with good quality Amaro then garnishing with a maraschino cherry and an orange twist. Alternatively, it is also delicious as an alternative to our classic Islay Dry Gin when making a G&T.

Is The Botanist Cask Rested Gin a good gin?

Yes, The Botanist Cask Rested Gin is widely considered to be an excellent gin, picking up a prestigious Masters Medal at the Global Gin Masters in 2025 - the highest accolade available. It is one of the first gins on the market to have been briefly matured in oak casks, offering a different taste experience compared to a more classic dry gin, such as The Botanist Islay Dry Gin.

What botanicals are used in The Botanist Cask Rested Gin?

The same selection of 22 wild Islay botanicals is used in The Botanist Cask Rested Gin as we use in our classic Islay Dry Gin. The full list is apple mint, chamomile, creeping thistle, downy birch, elder, gorse, lemon balm, hawthorn, bog myrtle, sweet cicely, lady’s bedstraw, spear mint, water mint, meadowsweet, red clover, tansy, mugwort, white clover, heather, wood sage, wild thyme and a token sprig of Islay juniper. All of them are responsibly hand-foraged by our two professional foragers.
